1. In a 3 quart saute pan, saute shallot and garlic in butter until aromatic
  2. Add chicken stock and Just Cook Ancho chicken rub, bring to a boil and reduce by half
  3. Add heavy cream, bring to a boil and simmer until you have a sauce like consistency
  4. Add pasta and chicken and toss to heat and coat
  5. Toss in pistachios at the end
  6. Season to taste with salt and pepper.


  • 1 tbs unsalted butter
  • 1 shallot, sliced
  • 2 clove of garlic, sliced
  • 2 cups chicken stock (see other recipe although store bought stock may also be used)
  • 1 tbs Just Cook Ancho Chicken Rub (add more if you crave the kick!)
  • 4 oz heavy cream
  • 12 oz shell pasta, cooked (or some other small pasta)
  • 1 cup cooked chicken, diced
  • 1/4 cup chopped pistachios
