1. Season chicken with Just Cook Foods Any Day Chicken Blend and bake at 325 degrees for approximately 25 minutes or until cooked through.
  2. Mix crème fraiche, limejuice, spring onion, celery, Just Cook Foods Any Day Chicken Blend, oil and vinegar. Set aside.
  3. Once chicken is cooked, allow to cool. Then shred (pull the meat apart).
  4. Combine with the dressing mixture.
  5. Mix in moong dal right before serving.

Enjoy as is, or with leafy greens or on flatbread or crackers.


  • 2 lbs boneless, skinless chicken breast

  • 1/4 cup crème fraiche
  • 1/2 lime, juiced
  • 1/4 bulb of spring onion, white only, sliced thin
  • 1 stalk of celery, sliced thin

  • 2 tbs extra virgin olive oil
  • 1 tbs high quality sauvignon blanc or champagne vinegar
  • 1/4 cup moong dal (fried moong lentils), available in finer grocery stores or Indian markets
