This is the perfect summer meal.  Citrusy chicken, seasoned with our Just Cook Foods Any Day blend  paired with ripe, juicy tomatoes with burrata cheese.   The cardamom seasoning in the blend really complements the fresh lemon and lime juice.   Great on bone-in chicken breasts as well if you are not a drumstick eater.

  1. Toss chicken with 2 TBS canola oil and a dash of salt and pepper.
  2. Preheat your grill to medium.
  3. Place chicken, skin side down on grill – always watch for flare ups. Try not to have the chicken directly over the coals.
  4. Meanwhile, mix together the remaining 2 TBS canola oil with the Just Cook Any Day Chicken Blend and the lemon and lime juice. This will serve as your basting liquid.
  5. After 15 minutes of cooking, turn the chicken over and baste it with a long handled pastry brush. Continue to baste every 10 minutes until the chicken is done. It should take approximately 35 minutes in total.
  6. Lightly oil the ciabatta slices and grill quickly and carefully.
  7. For the tomatoes, it couldn’t be easier. Wash well, cut out the core and cut into slices or wedges. Season with salt and pepper.
  8. Arrange tomatoes and watermelon on a platter.
  9. Top with torn mint leaves, Burrata cheese and pistachios.
  10. Drizzle all with olive oil.
  11. Serve and enjoy!


  • 4 leg quarters (drumstick and thigh attached).
  • 2 TBS canola oil
  • salt and pepper to taste
  • 1 TBS Just Cook Any Day Chicken Blend
  • 4 TBS fresh squeezed lemon juice
  • 2 tsp fresh squeezed lime juice
  • 2 TBS canola oil
  • 1 lb ripe, heirloom tomatoes
  • 2 cup seedless gold watermelon, cubed
  • 1/2 bunch mint leaves
  • 4 oz burrata, cut into 4 pieces
  • 1/2 cup chopped pistachios
  • 2 TBS olive oil
  • salt and pepper to taste
  • 8 thick slices of ciabatta bread, day old is fine
  • 2 TBS olive oil
