Ancho Chicken Wings

  1. Rub wings with oil and season with Ancho Chicken Rub.
  2. Bake on a lightly oiled baking sheet in a 350 degree oven until done – about 30 minutes.
  3. Toss with Bacon Maple Glaze (recipe follows)

Bacon Maple Glaze

  1. Over medium heat cook diced bacon until fat is rendered and bacon becomes crisp.
  2. Add shallot and garlic and continue to cook until garlic is aromatic and just begins to brown slightly.
  3. Add remaining ingredients and simmer until reduced by 1/2

Avocado, Bocconcini and sweet 100s

  1. Combine all.
  2. Season with salt and freshly cracked black pepper.

Ingredients

    Ancho Chicken Wings

    • 12 chicken wings – wing tip removed
    • 2 Tbs canola oil
    • 2 Tbs Ancho Chicken Rub

    Bacon Maple Glaze

    • 4 slices applewood smoked bacon – chopped fine
    • 1 shallot - sliced thin
    • 8 cloves garlic – minced
    • ½ C Katz apple cider vinegar
    • ¼ C lemon juice
    • ¼ C maple syrup
    • 1 Tbs whole grained mustard
    • salt and pepper to taste

    Avocado, Bocconcini and Sweet 100s

    • 1 ripe but firm avocado
    • 1 C bocconicini(small mozzarella balls)
    • 1 pint sweet 100s or other small ripe tomatoes – halved
    • 3 sliced scallion – white and green
    • ¼ C sliced radish
    • 3 Tbs extra virgin olive oil
    • 2 Tbs aged balsamic vinegar
    • ½ bunch basil leaves torn
